Lemon Yogurt Cake



This cake was baked when my nephew came to my house to stay over weekend. He was very interested and persistant to try out baking so I decided to pick one easy recipe for him . Since I had many lemons to clear, this lemon yogurt cake fit nicely into my requirements.


I used the 8" x 3.5" x 3" cake pan that yield shorter cake. If you prefer taller care, feel free to use smaller cake pan.

Recipe adapted from 橘色陽光下.

Ingredients :
Wet Ingredients :

4 eggs
115g yogurt original flavour (I used 1 bottle which is 140g)
1 lemon zest (from 1 whole lemon)
1 tbsp lemon juice
110g butter (soften in room temperature)
110g castor sugar (I reduced to 100g)

Beat all the above ingredients till welll combined.

Dry Ingredients :
150g cake flour
1.5 tsp baking powder

Sift the above dry ingredients.

Lemon Syrup :
1 tbsp icing sugar
2 tbsp lemon juice

Stir to mix well and set aside for later use.

Method :
1. Fold in the dry ingredients to the wet ingredients, careful not to be overfold.
2. Pour the cake batter to the cake pan and bake at pre-heat oven at 180C for 35 - 40 mins.
3. Remove the cake from the oven and drizzle with lemon syrup.

Verdict?
The cake is refreshing, light, moist, soft and compact. Tasted much like lemon butter cake that I baked sometimes ago but for personal preference, I will prefer lemon butter cake for its buttery taste and crumb, fluffier texture.

    I think if you use creaming method for this cake, the cake will be much fluffier, since u said it was dense.
    But the crumb does look nice woh.

  8. I love using yoghurt in cakes, it yields a different texture as compared to just using butter. I would say it melts in the mouth more easily. But again if you like buttery taste, then all in on the butter, yah! Love the yellowish golden colour. :)

  12. Jess...this cake is so refreshing and it looks moist too. I have a lot of lemons in the fridge too...need to clear them off and what better way ...lemon yoghurt cake. Will make this for sure...thankss for sharing the recipe. !

  22. Love your lemon yogurt cake, look so delicious ... the look of your cake spurs me to bake it too.
    In fact, I also like to use yogurt to bake cake. I think I hv 2 small tubs of yogurt sitting in my fridge ... better go & bake it before it expires.

  26. oh Jess....what a perfect cake...I love using yogurt to bake with and the lemon kept it light and refreshing!! It has such a nice crumb, you can see how moist it is...I just wish I could taste it!

  32. Wendy, ok I will try creaming method next time. The cake did taste nice but since the taste very very closed to the previous lemon butter cake I baked so I will choose over lemon butter cake since I love the buttery and fluffier texture.

    Bee Bee, I actually love yogurt cake too. This yogurt cake has very similar taste of the lemon butter cake but if both to let me choose, I will choose butter cake, more addictive :P. But this cake still taste yummy.

She kept raising voice at my nehphew when he did all the cracking of eggs, mixing of batter etc. My MIL still thinking that he is a toddle that cannot handle things well :(.
