Pickled Pumpkin with Preserved Mandarin Peels






After trying up the pickled pumpkin with sour plum and fall in love with it, I decided I should try out using the preserved mandarin peels that I used to make but marinated the fruits like apples, pears, guavas.

Ingredients :
500g pumpkin
1 packet preserved mandarin peels, 15g per packet (you may increase if you prefer sweeter and saltier)
1 chilli (optional)
4 limes (you may cut down if you dun like too sourish)

Methods :
1. Remove skin and seeded the pumpkin and slice thinly, approx 2mm thick or your desire size. 
2. Soak the pumpkin in salt water for 30 mins and rinse the pumpkin.
3. Slice the mandarin peels thinly.
4. Remove the seeds of the chilli, and slice the chilli thinly into stripes.
5. Obtain the lime juice and chop up 1 lime.
6. Mix pumpkin, mandarin peels, lime juice, chopped lime and chilli together. Toss to mix well.
7. Transfer into a plastic container and store in fridge for at least 6 to 8 hrs b4 serving.
8. Serve chilled.

Verdict?
This is best to eat after chilled for 1 day as I find if eat too early, it will have the 涩涩, unripe taste.

    I haven't had time to drive to the chinese supermart yet, but the sour plums and preserved mandarin peel are on my to-buy-list and this is certainly on my to-do-list. =)
