Oreo Cheesecake bar

This was baked at August for dear husband's birthday, although it crashed into the period that I was started to busy, meeting almost everyday, there are a lot of works during pre-meeting and post-meeting. However I still squeezed out my time to make a simple birthday cake for dear husband, actually main objective is to let the children blow candles with him lol.

Since dear husband requested for cheesecake, I decided to bake using the ingredients available at home and also my kids will like.

Recipe adapted from Anncoo Journal

Ingredients : for 8" square pan
160g oreo cookies, remove the cream and crush it or grind coarsely
80g melted butter or add a little more if needed
Mix crushed ore cookies with melted butter and press firmly on the base of the cake pan and chill in the refrigerator for later use. (I baked in the oven for 10 mins, chilled in the fridge for later use once cool.

Cream Cheese filling:
250g cream cheese (room temperature)
70g sugar (I cut down to 55g)
3 eggs
1 tsp vanilla extract
1 tbsp fresh milk
100ml sour cream/natural yoghurt (I used dairy whipping cream)
3 tbsp plain flour - sifted
70g oreo cookies, remove cream and break into quarters, alternatively you can break the whole Oreo together with the cream if got a sweet tooth (I used chocolate cream oreo cookies)

Method:
1. Beat cream cheese and sugar until smooth and creamy.
2. Add sour cream/yogurt/dairy whipping cream, milk and vanilla extract, mix well.
3. Add eggs, one at a time, beating after each just until blended and add 3 tbsp sifted flour into it and mix well.
4. Lastly add in oreo cookies and fold in with a rubber spatula and pour into prepared baking pan.
5. Bake at pre-heated oven at 150 degrees C for about 30 minutes.
6. Leave cheesecake to cool completely. Spread chocolate ganache cream on it and decorate as desire or just dust some icing sugar on top.
7. Chill cheesecake for few hours before serve.

Note: For perfect slices, dip your knife in hot water and quickly dry it off before each cut. (I do not bother to do that so my cake is a bit messy hahaha...)

Verdict?
You will never go wrong to pair cheesecake with chocolate and oreo, the combination is great. However dear husband commented that although the cake is nice, but he will prefer the cheesecake layer to be richer. He is someone that want food to be strong in taste, "liao" aka ingredients must be a lot lol. I brought some to share with my colleagues and they said is yummy!
