Feeling extremely sleepy, set alarm last night to wake up at 4am to bake for LTU but end up woke up at 3am lol. Need to be more hardworking during October in order to achieve my target of daily post:).
Finding a easy and simple recipe with use of coconut to cook for Sunday dinner.
Recipe adapted from Phong Hong Bakes
Ingredients :
4 chicken maryland, chopped into 3 pieces
3 tbsp olive oil or any cooking oil

Cooking Sauce :
1 cup diced onions
1 tbsp chopped garlic
1 tbsp chopped garlic
1 tbsp soy sauce
2 tbsp maggi seasoning (I used 1 tbsp fish sauce and 1 tbsp Knorr no MSG chicken seasoning powder)

2 tsp salt (1 drizzled a bit into the chicken)
2 tsp sugar (I used 1 tsp)

1 tsp black pepper
1/2 cup dry or sweet sherry wine (I used shaoxing wine)
1 cup (8 oz/236ml) coconut water
Method :
1. Cut up whole chicken into 12 pieces.
2. Saute chicken in 3 tbsp olive oil until lightly browned.
3. Add cooking sauce ingredients and simmer covered for 10
minutes.
4. Pour in and coconut water and simmer for
another 20 minutes or until chicken is cooked and sauce is thick.
Note : If chicken bleeds a lot of water, remove the chicken
once cooked and continue to simmer the liquids until it reduces and becomes
thick.
Verdict?
The chicken left with no much of gravy, dried up fast while shimmering. The chicken is tasty but a bit too salty for us, good to eat with plain rice.
