For such scorching hot weather, need to consume something cooling. Bookmarked this recipe quite sometimes ago but just didn't make it to do it. Until I bought the fresh coconuts for another dessert, so why not one stone hit 2 birds heeheehee....
Recipe adapted from Jessie Cooking Moment and Copycake Kitchen with modifications
Ingredients
(A)
400ml fresh coconut water
30g caster sugar
3g agar-agar powder
1- 2 pandan leaves
(B)
adequate fresh coconut meat
Method :
1. Cook ingredients (A) over low-medium heat until hot bubble start building up on the sides of the
pan. Stir occasionally.
2. Remove from heat and
continue to stir for 30 seconds. Let to cool down for 5 minutes.
3. Place coconut meat in the molds, then pour the aga-aga syrup into molds. Cool
down completely.
4. Refrigerate for at least
2 hours before serve.
Verdict?
The jellies are "crispy", not hard kind of aga-aga instead a bit fragile. But the texture is just what I like, I dun like jelly or aga-aga that is hard or "chewy" kind which made of gelatin. These jellies are very refreshing and so good especially with the fresh coconut meats.
