Do you have this habit of stocking up for baking? I am trying to quit this habit, so trying to clear whatever stock I have lol.
Ingredients : yield 12 muffins cup
with 5cm dimension
(A)
240g self raising flour,
sifted
8g green tea, sifted
100g castor sugar
150g raisins
(B)
2 egg, beaten
60g corn oil
20g coconut oil
160g buttermilk
10g desiccated coconut
Method :
1. Preheat oven at 180C.
2. In a mixing bowl, add in (A) and mix well.
3. Pour in B to
another mixing bowl and mix well.
4. Mix the dry
and wet ingredients together with slow and gentle strokes. Stop stirring once
the last traces of flour disappear. Do not over mix. A lumpy batter will ensure
the muffins stay moist and fluffy.
5. Fill up the
muffin cases 70% full with the mixture and sprinkle the desiccated coconut on
the top.
5. Bake for about 15-20 mins.

Verdict?
The muffins are moist with light
green tea taste, match very well with raisins.

There are so many times I stocked up until the ingredients expired! Now I try my best to keep track and use them all up before they expire! These buttermilk muffins look gorgeous and delicious!
