Bread making is a love and hate feeling for me, I love making bread as I enjoy
the moment when I am able to stretch the dough till windowpane stage without
tearing, I never get tire of it. The hate feeling is, making bread
is such a long waiting hours lol.
I had baked Wu Bao Chun
Champion loaf before but yet to post, the bread were well received. So while
looking for recipe to bake some bread last min (since I was able to wake up at
4am), this straight forward method is one of the top choice. To make it for
LTU, I turned this bread to pandan coconut flavor.
Recipe Adapted from Aunty Young with modifications.
Ingredients
: yield 1077g dough
590g bread flour
10g
coconut powder
48g
sugar
6g
salt
30
butter
6g
or 1.5 tsp yeast
170g
pandan juice (20g pandan extract and 150 pandan water)
80g
whipping cream
146g
milk
Method
:
1. Mix all ingredients (except butter) into a dough using low speed, then use medium speed to knead it into a shiny and smooth texture.

2. When the dough looks smooth and slightly
elastic, add butter. Continue kneading until the dough
is smooth, glossy and elastic, until reach windowpane stage.
3. Shape the dough
into ball and place it in a greased bowl, spray some water at the dough and
cover with a wet towel or cling wrap. Let it proof until double in size, about
45-60 mins.
4. Place the
dough on a floured surface. Gently press the dough to remove air bubble. Divide
the dough evenly.
5.Roll each small
dough into balls. Spray with some water, cover with cling wrap and let to rest
for 10 minutes.
6. Shaped the dough,
wrap with desire filling and place in the greased baking pan. Repeat for the
rest of the dough.
7. Spray with some
water and let to proof until double in size, about 30 - 40 mins.
8. Brush some egg wash
on top, follow by sprinkle with desire topping, if necessary.
9. Bake in a
180C preheated oven until golden, about 15-17 minutes.
10. Remove from oven
and place on the wire rack to cool down.
11. Keep in air-tight
container after completely cool.
Verdict?
This
bread is so yummy, even dear husband also given BIG thumbs up. It is soft, fluffy with pandan coconut fragrance, definitely a
keeper!

ReplyDeleteMy kids would choose the sausage bun. I would prefer to use bread maker machine cos I have no energy to mix the dough, haaaa...
