Milo Marshmallows Muffins

Recipe adapted from Victoria Bakes

Ingredients : 10 muffins
120g full cream milk
80g milo powder (divided into 70g + 10g portions)
75g butter, melted and cooled
1 large egg
10g cocoa powder
180g cake flour
2 tsp baking powder
60g sugar
Mini marshmallows, as appropriate (Optional)
Mini marshmallows, snipped into small pieces (optional)

Method :
  1. Dissolve 70g milo into milk
  2. Set aside
  3. Sift flour, cocoa powder, 10g milo powder and baking powder into mixing bowl
  4. Add in sugar and whisk to mix
  5. Add all wet ingredients (egg, melted butter and milk) into dry ingredients
  6. Mix well
  7. Batter should be very sticky
  8. Fill muffin liner with batter then top with some mini marshmallow
  9. Top with batter right to the brim of liner
  10. Top Bbtter with some snipped marshmallow
  11. Bake in center rack of 220 degrees C preheated oven for 10 mins
  12. Turn the temperature down to 200 degrees and continue baking for another 8-10 mins
  13. (tent muffins with foil when marshmallow have browned)
