Recipe adapted from Guai Shu Shu
Ingredients: yield 18-19 muffins
250g desiccated coconuts
250g self raising flour
250g desiccated coconuts
250g self raising flour
250g melted butter
250g eggs (about 5 eggs)
250g castor sugar
200ml or a small packet or package coconut cream
pinches of salt
Methods:
1.
Pre-heat the oven to 180C.
2. Mix all the wet ingredients together, stir until well mixed.
3.
Add in the desiccated coconuts and self raising flour. Stir until
well mixed.
4.
Transfer the batter to the cupcakes cases and bake for 20-25 minutes or when a skewer inserted turns out clean.
