Ingredients :
350g black glutinous rice
180g gula melaka
30g sugar
1 tsp salt
a few pandan leaves
Method :
1. Wash and rinse the black
glutinous rice thoroughly and soak in water for a few hours or overnight.
2. Add the black glutinous rice,
water and knotted pandan leaves into a pot and cook over medium or low heat for
30 to 45 minutes until soft and break up (I put a porcelain spoon in it to
speed up the process). Stir constantly and check regularly the water level.
3. Once the black glutinous rice
is soft, add in salt, gula melaka and sugar. If it is too thick add some water until
your desired consistency.
4. Remove from heat.
5. Serve black glutinous rice dessert in a small bowl top with coconut
milk or vanilla or coconut ice cream.
