Caramel Mud Cake


I have a packet of white chocolate chips to clear off so was looking around for bakes with white chocolate, I then remember I had bookmarked this caramel mud cake from Ellie. Since I have all the ingredients at home, I went ahead to bake this cake and of course, my cake dun look as nice and delicious as Ellie's but the taste definitely is as good :).



Recipe adapted from Ellie which is from Taste.co.au.

Ingredients : for 8" to 9" round cake pan
200g butter, cubed
200g white chocolate, chopped (I used white chocolate chips)
200g (1 cup, firmly packed) dark brown sugar (I reduced to 115g)
180ml (3/4 cup) hot water
1 tbps golden syrup
2 tsp vanilla essence / extract
2 eggs, at room temperature
150g (1 cup) plain flour
150g (1 cup) self-raising flour
Icing sugar, to dust (I forgot about it)

Method
1. Preheat oven to 160C. Grease and line base and side with non-stick baking paper.
2. Place butter, chocolate, sugar, water, golden syrup and vanilla essence/extract in a heavy-based saucepan. Stir over medium-low heat with a wooden spoon for 5 mins or until chocolate melts and mixture is smooth. Set aside for 20 mins to cool.
3. Add eggs, 1 at a time, beating well after each addition.
4. Sift combined flours over chocolate mixture and stir with a wooden spoon until well combined.
5. Pour mixture into pan and bake in preheated oven for 50-60 mins or until a skewer comes out almost clean.
6. Stand cake for 20 mins before turning onto a wire rack to cool.

Verdict?
The cake is dense and moist, sweetness just nice for me and the taste is great, it has the fragrant taste of white chocolate and caramel. I recieved compliments on this cake and especially dear brother likes it lot.

  1. Once I made a white chocolate cake from Rose's Heavenly cakes, and it was so so sweet.
    Crazy sweet. Her other cakes in that book aren't that sweet.

    I'd love to have a slice of that now with a cup of tea. Teh-O. Yummy.

  5. Jess, the cake looks fine! Just that it doesn't crumble the way you want or expecting, right! However, I guess the cake already all gone by now. :o) Btw, did you add in the eggs to beat together with the batter or you add in beatened eggs?   14. Dense and moist, must have a nice bite and flavor, yum! But when it comes to white chocolate or caramel, I am quite skeptical, I old already, cannot take too sweet, hahaha! But I trust u lah!

  19. That's the first time that I heard of mud cake. It seems originally it should be dark chocolate based to represent the color of mud.

  20. Mmmm....delicious with a cup of milk. I would love to try more baking with white chocolate. I ate a raspberry white chocolate muffin at the airport the other day. It was really good....still think of it :D

  21. Wendy, this cake is not so sweet as I had reduced the sugar almost to 50% plus using dark brown sugar not as sweet as white sugar. I dun like my bakes to be sweet, so will try to cut down sugar if possible.

    Min, this was my 1st time using white chocolate in cake, I am surprised by the taste cos I dun like to eat white chocolate but in baking, really nice.

    Bee, I totally understand, I never like white chocolate, baked this cake was to clear stock of white chocolate but I was surprised for the taste of cake baked by white chocolate, really nice.I cannot take cake too sweet too, so I prefer to bake myself cos I can control the sweetness, when I cut cut cut the sugar, I very happy hahaha....
