Recipe modified from Yen Happy Baking
60g icing sugar
90g self raising flour
½ tsp vanilla extract
- Cream butter and sugar till pale and fluffy.
- Beat in eggs one at time, beat well after each addition.
- Add in vanilla extract and mix well.
- Add in flour and mix at low speed till well blended.
- Stir in raisins, mix well.
- Pour batter into a lined loaf pan and bake at 180C for 35 - 45 minutes or till cooked.
